At the Chair of Management of Digital Food Business, we investigate how quantitative methods and digital technologies can support more efficient and sustainable food supply chains.
Our research applies Operations Research (OR) and optimization-based modeling to address decision problems in the management of food supply chains. We develop and analyze models that help improve efficiency, profitability, and environmental performance, while also considering social aspects such as food waste and redistribution where relevant.
A particular focus lies on the reduction of food waste through improved operational and strategic decisions in supply chain management. To this end, we employ optimization, simulation, and data-driven approaches to understand trade-offs and design solutions that can be implemented in practice.
We aim to advance both academic knowledge and practical relevance. Our research contributes to a better understanding of how data and quantitative decision models can foster sustainable and resilient food systems—supporting businesses in becoming economically viable and environmentally responsible.
